Ingredients
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 cup unsalted butter at room temperature
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 tsp vanilla extract
2 large eggs
2 cups semisweet chocolate chips
1 cup chopped nuts optional
Instructions
1-Make the Dough: In a large bowl, combine 2 cups flour, 1 tsp salt, and 1/2 cup water until a smooth dough forms. Knead on a lightly floured surface for 5 minutes.
2-Prepare the Filling: In a separate bowl, mix 1 cup ricotta cheese, 1 egg, 1/4 cup grated Parmesan cheese, and 1/4 tsp nutmeg. Season with salt and pepper to taste.
3-Assemble Ravioli: Roll out dough into thin sheets. Place spoonfuls of filling about 1 inch apart on one sheet. Cover with a second sheet and press down around filling to seal. Cut into squares.
4-Cook Ravioli: Bring a large pot of salted water to a boil. Add ravioli and cook for 4-5 minutes, or until they float to the top. Drain and serve with your favorite sauce.
