2 pounds boneless skinless chicken breasts, cut into bite-sized pieces
2 tablespoons olive oil
2 tablespoons low sodium tamari or soy sauce
2 tablespoons chili garlic sauce
2 tablespoons rice vinegar or apple cider vinegar
3 tablespoons honey
Juice of 1 lime (about 2 tablespoons)
3/4 teaspoon smoked paprika
1/2 teaspoon kosher salt
1 small fresh pineapple, cut into approximately 1-inch cubes
Optional: 2 red onions, 1 red bell pepper, 1 yellow bell pepper, cut into large dice


Instructions

1. Whisk together all ingredients except the chicken, pineapple, and optional vegetables to create the marinade. Reserve 1/4 cup for brushing while grilling.
2. Place the chicken pieces in a resealable bag, pour in the remaining marinade, and massage to coat. Refrigerate for at least 6 hours or overnight.
3. Preheat grill to 400ยฐF. Thread chicken, pineapple, and optional vegetables onto metal or soaked wooden skewers, alternating pieces.
4. Grill skewers for 3-4 minutes per side, or until the chicken reaches an internal temperature of 165ยฐF. Brush with reserved marinade during the last 1-2 minutes of cooking.
5. Serve skewers over rice or cauliflower rice, garnished with cilantro and lime wedges if desired. A peanut sauce can also be served on the side for an additional flavor option.
