225g steak

8 to 10 shrimp

1.5 cups assorted chopped vegetables

2 tbsp oil

2 tbsp Shaoxing wine

1 tsp cornstarch

1 tsp soy sauce

120 ml chicken broth

45 ml soy sauce

2 tbsp brown sugar

1 tbsp oyster sauce

1/2 tsp ground ginger

1 tsp cornstarch

optional chili crisps/red chili flakes

Instructions

First Step: Prep Your Ingredients Slice the steak thinly against the grain to ensure tenderness. Peel, devein, and clean shrimp. Chop the assorted vegetables and prepare all sauce ingredients. Cook the dried rice noodles following package instructions, drain well and set aside to avoid sogginess.

Second Step: Marinate the Steak In a bowl, mix sliced steak with Shaoxing wine (or substitute), cornstarch, and soy sauce. Let it marinate for at least 20 minutes, or up to 4 hours for enhanced flavor and tenderness.

Third Step: Sear the Steak Heat oil in a heavy-bottomed skillet or wok over medium-high heat. Add marinated steak in batches and sear quickly for about one minute per side until browned but still tender. Remove and set aside.

Fourth Step: Stir-Fry Vegetables Add more oil if needed, then toss in vegetables. Stir-fry for 4 to 5 minutes until they soften but remain crisp. This step maintains the fresh, vibrant texture of the veggies, which complements the proteins.

Fifth Step: Cook the Shrimp Add shrimp to the pan, stir-frying until they curl into a C-shape and turn opaque, roughly 2-3 minutes. Be careful not to overcook to preserve the shrimp’s tenderness.

Sixth Step: Combine and Sauce It Up Return the steak to the pan, pour in the prepared sauce, and add the cooked noodles. Toss everything together carefully, cooking for another 1-2 minutes until the sauce thickens and evenly coats the ingredients.

Final Step: Garnish and Serve Stir in chopped green onions, taste, and adjust seasoning if necessary. Serve immediately while hot and fresh. For dietary adaptations, swap proteins and sauces accordingly during the earlier steps.
