Ingredients

– 1 ¾ cup (≈ 420 ml) warm water (110-115 °F / 43-46 °C)

– 2 Tbsp (≈ 30 ml) honey, plus extra 3 Tbsp for honey-butter glaze

– 1 stick (½ cup, 113 g) salted butter, softened, plus 6 Tbsp (≈ 85 g) for glaze

– 1 egg yolk mixed with 1 Tbsp (≈ 15 ml) water (egg wash)

– ¼ cup (≈ 60 g) baking soda (for the water bath)

– Pretzel-coarse salt, for sprinkling

– 6 Tbsp (≈ 85 g) salted butter, melted

– 3 Tbsp (≈ 45 ml) honey


Instructions

Step 1: Mix the Dough In a stand mixer’s bowl or a large mixing bowl, combine the flour, yeast, and salt. Add the warm water, honey, and softened butter, then knead on medium speed until the dough is smooth and slightly sticky, about 4-5 minutes. If the dough feels too sticky, add a little more flour as needed. This step sets the foundation for that soft, chewy texture in your soft pretzel recipes.
