1 tablespoon fresh tarragon or basil

1/4 teaspoon paprika

1 or 2 drops hot sauce

1 head iceberg or romaine lettuce

1 firm tomato

1 avocado

2 tablespoons drained capers

2 hard boiled eggs


Instructions

1-First Step: Prepare Shrimp and Vegetables If using uncooked shrimp, peel, devein, and poach them gently in seasoned water until pink and firm, then cool and pat dry. Dice celery, green onions, tomato, and avocado. Hard boil eggs, peel, and quarter them. Shred or chop lettuce ready for assembly.

2-Second Step: Make the Remoulade Sauce In a food processor or bowl, combine 1/2 cup mayonnaise, 1/4 cup Creole mustard, 1 1/2 teaspoons horseradish, 1 cup vinegar, chopped celery, green onions, parsley, tarragon or basil, paprika, black pepper, and optional hot sauce. While blending or whisking, slowly drizzle in 1/4 cup olive oil until the sauce emulsifies into a smooth, creamy texture. Chill until ready to use.

3-Third Step: Toss Lettuce with Dressing In a large serving bowl, toss shredded lettuce with about half a cup of remoulade dressing per 4-8 servings. This light coating prevents wilting but adds flavor to the base.

4-Fourth Step: Coat Shrimp with Sauce Gently toss poached shrimp with approximately 1/4 to 1/3 cup remoulade sauce, ensuring even coverage without soaking them. This highlights the shrimp with creamy, tangy flavors.
