Ingredients
– 80 g unsalted butter, softened
– 1 ½ tsp sea-salt flakes
– ¼ tsp freshly cracked black pepper
– 1 Tbsp freshly minced garlic
– 1 Tbsp honey
– 2 tsp fresh thyme leaves (or 1 tsp dried thyme, oregano, or Italian seasoning)
– 1.2 kg bone-in, skin-on chicken thigh cutlets
– ½ cup (approximately 120 ml) chicken stock
Instructions
1-Preheat your oven to 200°C (400°F), or 180°C (350°F) if you’re using a fan-assisted oven.
2-In a bowl, mix the softened butter, sea-salt flakes, black pepper, minced garlic, honey, and thyme leaves until it forms a smooth paste.
3-Lay the chicken thighs skin-side up on a rimmed baking tray and pat the skin dry for extra crispness.
4-Spread the butter mixture evenly over the chicken skin, focusing on the surface for maximum flavor.
5-Pour the chicken stock around the chicken pieces, not directly over them, to keep everything moist during roasting.
6-Roast in the oven for 55 to 60 minutes, basting once halfway through, until the skin turns golden-brown and the internal temperature hits 75°C (165°F).
7-Let the chicken rest for 5 minutes before serving; add a sprinkle of extra thyme and pepper for a final touch.
