Ingredients
2 pounds beef chuck roast, cut into 2-inch pieces
Kosher salt and freshly ground pepper, to taste
2 tablespoons olive oil, divided
2 medium yellow onions, coarsely grated
2 medium carrots, peeled and coarsely grated
6 cloves garlic, finely grated
2 tablespoons tomato paste
2 tablespoons all-purpose flour
6 cups best-quality beef broth
1 (12-ounce) package wide egg noodles
1 (8-ounce) block fontina cheese, freshly grated (mozzarella can be used as a substitute)
Finely chopped parsley, for serving
Instructions
1. Preheat oven to 350°F. Season beef generously with salt and pepper.
2. Heat 1 tablespoon olive oil in a large pot or braiser over medium-high heat. Brown half the beef on all sides, 5-7 minutes. Remove to bowl. Repeat with remaining oil and beef.
3. Add grated onions and carrots to pot; cook 5-7 minutes until softened and translucent.
4. Add grated garlic; cook 1 minute until fragrant.
5. Stir in tomato paste and flour; cook about 2 minutes until paste darkens.
6. Slowly add beef broth, scraping browned bits from pot.
7. Return browned beef and juices to pot. Bring to boil, cover, and transfer to oven.
8. Cook 2 to 2.5 hours until beef is tender and shreddable.
9. Remove beef, shred with forks. Increase oven temp to 400°F.
10. Bring broth to boil on stove; add egg noodles and cook until al dente (~5 minutes).
11. Stir shredded beef into pot with noodles. Adjust seasoning as desired.
12. Sprinkle grated fontina cheese evenly on top. Optionally add 1/2 cup seasoned bread crumbs.
13. Bake casserole 10 minutes until cheese melts and bubbles.
14. Garnish with chopped parsley before serving.
