Ingredients
– 1 ½ cups shredded coconut
– 1 ½ cups salted mini pretzel twists (about 85 g)
– 1 cup chopped fresh peaches (or frozen, thawed) roughly 150 g
– 1 cup old-fashioned rolled oats about 85 g
– 1 can (14 oz / 395 ml) sweetened condensed milk
– ⅓ cup peach jam approximately 80 g
Instructions
1-Preheat the oven to 350 °F (175 °C) and line a baking sheet with parchment paper.
2-In a large bowl, combine the shredded coconut, pretzel twists, chopped peaches, rolled oats, and the condensed milk. Mix until a uniform, slightly sticky dough forms.
3-Scoop roughly 3 Tbsp (about ½ cup) of dough onto the prepared sheet, spacing the mounds about 2-3 inches apart.
4-Press any stray bits of dough back into the mounds, then top each with about 1 tsp of peach jam. If you like, add an extra pretzel twist on top for more crunch.
5-Bake for 12-15 minutes, or until the tops turn a light golden color.
6-Allow the cookies to rest on the sheet for 5 minutes; they will firm up as they cool. Serve them warm or at room temperature.
