Description

Ingredients

– 2 cups old-fashioned rolled oats

– 1 cup salted, roasted cashews

– 1 cup Medjool dates, pitted

– 3/4 cup peanut butter (smooth or crunchy)

– 2 tsp vanilla extract

– 1/4 cup ground flax or hemp seeds (optional)

– 20 oz dark chocolate, melted (optional: reduce to 10 oz)

– Flaky sea salt, for sprinkling (optional)


Instructions

1-Gather all ingredients and line a 9×9-inch square pan with parchment paper to prevent sticking.

2-In a food processor or high-speed blender, combine the rolled oats, cashews, dates, peanut butter, vanilla extract, and optional ground seeds. Process until the mixture is sticky and holds together.

3-Transfer the dough to the prepared pan and press it evenly with a spatula or the back of a spoon.

4-Freeze for about 10 minutes to firm up the base.

5-Melt the dark chocolate in a microwave-safe bowl with 30-second bursts, stirring in between, or use a double boiler.

6-Pour the melted chocolate over the chilled dough, spreading it to the edges, and sprinkle with flaky sea salt if desired.

7-Chill in the refrigerator for at least 1-2 hours until the chocolate hardens; chill longer for a firmer texture.

8-Remove from the pan using the parchment overhang, cut into 16 even bars, and store as needed.

Notes

🧊 If the mixture feels crumbly, soak the cashews in hot water for 20 minutes, drain, and blend again for better binding.
🥜 Use the full ¾ cup of peanut butter; it’s essential for holding the bars together.
❄️ For cleaner slices, freeze the set bars for 3–4 hours before cutting.
