Ingredients

Scale

14-ounce bag of coleslaw mix
1 red bell pepper, diced
1 cup canned black beans, drained and rinsed
1 cup corn
1/4 cup fresh cilantro, chopped
1 jalapeño, chopped
1/2 cup mayonnaise
1/4 cup sour cream
Juice of 2 limes
1 tablespoon taco seasoning
Optional: honey, cumin, chile powder, blue cheese crumbles, diced celery

Instructions

1. In a large bowl, combine the coleslaw mix, diced red bell pepper, black beans, corn, cilantro, and jalapeño.
2. In a separate small bowl, whisk together mayonnaise, sour cream, lime juice, and taco seasoning to create the dressing.
3. Pour the dressing over the coleslaw mix and toss until all ingredients are fully combined and evenly coated.
4. Let chill in the refrigerator for at least 30 minutes before serving to enhance flavors.
5. Garnish with tortilla strips or seeds for added crunch, if desired.
6. Serve cold as a side dish or top with grilled chicken or shrimp to make it a main course.

Notes

🌽 Enhance the crunch by adding tortilla strips or roasted pumpkin seeds just before serving.
