Description

💜 Fragrant lavender and bright lemon combine for a refreshing twist on classic sugar cookies.
🍋 These soft, lightly sweet treats are perfect for tea time or a sunny afternoon snack.

Ingredients

– 1 cup (200 g) granulated sugar, plus 1/4 cup (50 g) for rolling

– Zest of 1 large lemon (about 1 1/2 tbsp)

– 1 Tbsp dried culinary lavender

– 1/2 cup (115 g) unsalted butter, softened

– 2 Tbsp (30 ml) fresh lemon juice

– 1 large egg

– 1 tsp (5 ml) pure vanilla extract

– 1 tsp (5 g) baking soda

– 1/2 tsp (2.5 g) salt

– 2 cups (250 g) all-purpose flour

Instructions

1-Ready to dive into baking these Lavender Lemon Sugar Cookies? It’s easier than you think, and I promise you’ll feel like a pro by the end! Start by preheating your oven to 350°F (175°C) and lining a baking sheet with parchment paper this little step makes cleanup a breeze and ensures your cookies bake evenly.

2-In a small bowl, combine 1 cup sugar, the lemon zest, and lavender. Rub them together with your fingertips for about 1 minute to really bring out that perfumed sugar magic. Transfer this mix to a large bowl, add the softened butter, and beat it with an electric mixer on high until it’s fluffy about 1 minute of pure bliss!

3-Blend in the lemon juice, egg, and vanilla until everything is smooth and combined. Sprinkle in the baking soda and salt, mix briefly, then add the flour and beat just until it’s all incorporated. The dough will be a bit sticky, which is perfect for that soft cookie texture. Scoop it into about 1-Tbsp portions, roll each ball in the reserved 1/4 cup sugar, and place them on your baking sheet, spaced 2 inches apart.

4-Bake for 10-12 minutes until the edges are set but the centers are still a touch underbaked they’ll firm up as they cool. Let them sit on the sheet for 5 minutes, then move to a wire rack. If you’re like me, you’ll want to try one warm it’s irresistible! For a fun twist, check out my strawberry cookies recipe for more fruity ideas to pair with these.

Notes

💜 Rub the lavender into the sugar early so its floral aroma infuses the whole cookie.
🍋 Roll the dough balls in the extra sugar for a delicate crunch on the exterior.
❄️ Store cookies in an airtight container; they stay fresh at room temperature 3‑4 days, refrigerated up to a week, or frozen for three months.
