Description

🍗 Savor crispy chicken cutlets with a delicious tomato and burrata topping, perfect for a special meal or weekday delight.
🥗 This dish combines fresh basil and burrata with a savory twist, bringing a piece of Italy to your table.

Ingredients

– 4 boneless, skinless chicken breasts for crispy cutlets

– 3 eggs for breadcrumb coating

– 1/2 cup all-purpose flour for dredging

– 1 1/2 cups Italian panko breadcrumbs for coating

– 1/2 cup grated Parmesan cheese for savory flavor

– 2 cups cherry tomatoes for topping

– 1 1/2 cups fresh basil leaves for herbal brightness

– 2 tbsp olive oil for cooking

– 3 cloves garlic for savory depth

– 1/2 tsp kosher salt for seasoning

– 1/4 cup dry white wine for deglazing

– 1 tsp lemon juice for freshness

– 1 tsp lemon zest for aroma

– 1 burrata cheese ball for topping

– 2 tbsp balsamic glaze

– Oil for shallow frying

– Salt and pepper

– 8 thin slices prosciutto for extra flavor

– 1 tsp red pepper flakes for heat

Instructions

First Step: Prep the Chicken Cutlets. Gently pound the chicken breasts between sheets of plastic wrap or in a plastic bag to an even thinness of about ¼ inch. Season both sides evenly with salt and pepper. Optionally, add two fresh basil leaves and a slice of prosciutto on each breast, folding to create a flavorful bundle.

Second Step: Set up Dredging Stations. Prepare three shallow bowls: one with flour, one with whisked eggs, and one with panko breadcrumbs mixed with grated Parmesan cheese. Dredge each chicken cutlet first in flour, shaking off excess, then dip in egg wash, and finally coat with the breadcrumb mixture, pressing gently to adhere for maximum crunch.

Third Step: Cooking the Chicken Cutlets. Heat about ½ inch of canola or avocado oil in a heavy skillet over medium heat, maintaining oil temperature around 325°F. Fry chicken cutlets 2-3 minutes per side until golden brown and cooked through, avoiding crowding the pan to keep them crispy. Alternatively, cook cutlets in an air fryer at 375°F for 8 minutes, flipping halfway, or bake at 375°F for 15-20 minutes, flipping once.

Fourth Step: Prepare the Tomato Basil Topping. In a separate skillet, heat 2 tablespoons olive oil over medium heat. Add cherry tomatoes and sauté without stirring for 2 minutes so they blister, then cook for an additional 3 minutes. Add minced garlic, salt, and optional red pepper flakes and cook until fragrant. Deglaze with white wine or balsamic vinegar, reducing the liquid by half. Remove from heat, then stir in fresh basil chiffonade and lemon juice.

Final Step: Serve with Burrata. Plate the crispy chicken cutlets, spoon the warm tomato basil topping evenly over each, add torn pieces of burrata cheese, and sprinkle lemon zest on top. Drizzle with balsamic glaze and garnish with extra fresh basil leaves. Serve immediately to enjoy a perfect contrast of crispy and creamy textures.

Notes

🔨 Use a pan or rolling pin if a meat mallet isn’t available to pound the chicken.
🍽️ Set up dredging bowls in sequence for ease and even coating.
🌡️ Maintain frying oil temperature at 325°F to avoid burning breadcrumbs.
