Instructions

1- Mash 3 ripe bananas in a large bowl using a fork until smooth and creamy.

2- Add 1/3 cup creamy nut or seed butter, 2 cups oats, 1/4 cup non-dairy milk, 1/2 teaspoon cinnamon, 1 teaspoon vanilla extract, and the optional 1/4 cup chopped nuts or raisins. Mix everything until fully combined for a thick batter.

3- Scoop the batter into cookie shapes onto a lined baking sheet using a cookie scooper. Remember, these cookies won’t spread much, so shape them as you like.

4- Chill the cookie dough in the fridge for 30 minutes to help it hold its shape during baking.
