Instructions

First Step: Prepare Chimichurri Sauce and Marinate Shrimp Finely chop flat-leaf parsley, cilantro, garlic, and shallot. Mix with red wine vinegar, extra virgin olive oil, warm water, dried oregano, salt, black pepper, and red pepper flakes in a bowl. Set aside to let flavors meld. Marinate peeled and deveined shrimp in olive oil, lemon juice, minced garlic, and salt for 15 to 30 minutes, taking care not to exceed 30 minutes to avoid the citrus “cooking” the shrimp.

Second Step: Prepare Skewers and Preheat Grill Soak wooden skewers in water for at least 30 minutes to prevent burning, or use metal skewers. Thread 5 to 6 shrimp onto each skewer, leaving space between pieces for even cooking. Preheat your grill to medium-high heat, about 400°F (204°C), and oil the grates to prevent sticking.

Third Step: Grill the Shrimp Skewers Place shrimp skewers on the hot grill. Cook for 2 to 3 minutes per side, brushing occasionally with chimichurri sauce to infuse flavor without burning. Monitor carefully to avoid overcooking; shrimp should turn pink and opaque inside while remaining juicy and tender.
