Ingredients
2 cups flour

1/2 cup sugar
1 teaspoon salt

1/3 cup milk, room temperature
2 1/2 cups flour
1/2 cup packed light brown sugar
1 teaspoon baking powder
1 teaspoon fresh ground canela (cinnamon)
1/3 teaspoon ground anise
1/3 teaspoon salt
1/2 cup unsalted butter, room temperature
1/2 cup warm milk
1 large egg, lightly whisked
1/2 teaspoon vanilla extract (optional)
Instructions
1-Roll the dough into balls 12 for classic or 14-16 for the spiced version and cover them to rest for 20 minutes. This little wait makes all the difference in the texture.
2-Heat your griddle to medium-low for classic or just below medium for the variation.
3-Flatten each ball to about 3 inches wide for classic or 3 1/2 inches for the spiced one, using a tortilla press or rolling pin.
4-Cook each side for around 2 minutes until theyβre nicely browned, and keep them covered to stay soft.
5-Once done, serve them warm, maybe with a bit of butter, and enjoy the fruits of your labor.
