Ingredients

2 1/3 cups granulated sugar
7 to 9 large egg whites, room temperature
1 1/3 to 1 1/2 cups buttermilk, room temperature
1 tablespoon vanilla extract
2/3 to 1/2 cup rainbow sprinkles
For the Frosting:
1 pound unsalted butter, softened
2 pounds powdered sugar
1/2 teaspoon salt (optional)
3 to 6 tablespoons heavy cream
1 tablespoon vanilla extract
Instructions
1. Preheat oven to 350Β°F (175Β°C). Prepare three 8-inch cake pans with parchment paper.
2. Sift together flour, baking powder, baking soda, and salt in a medium bowl.
3. Beat butter and sugar until creamy, then add oil and vanilla extract.
4. Alternate adding dry ingredients and buttermilk, mixing on low speed.
5. Whip egg whites to stiff peaks, then fold into the batter with sprinkles.
6. Divide batter among pans, smooth tops, and tap to release air bubbles.
7. Bake for 25-38 minutes until a toothpick comes out clean.
8. Cool cakes in pans for 10-20 minutes, then on wire racks.
9. For Frosting: Beat butter and salt, then add powdered sugar gradually.
10. Add cream to frosting for desired consistency, then beat in vanilla extract.
11. Assemble cake: Layer with frosting between each layer, apply crumb coating, and chill.
12. Frost cake with remaining frosting, decorate with sprinkles as desired.
