Description

🥔 Experience comfort in a crockpot with creamy, cheesy potatoes paired perfectly with smoky kielbasa.
🥘 Ideal for a hassle-free, hearty dinner that pleases the whole family.

Ingredients

Scale

28 oz frozen Potatoes O’Brien with peppers and onions – hearty base with added veggies for flavor and texture

12 to 28 oz kielbasa or smoked sausage – smoky, savory protein component

10 oz cream of chicken soup – creamy binder for moist, delicious potatoes

1 ranch seasoning packet (optional) – adds tangy, herbaceous flavor

1 cup shredded Colby Jack cheese – melty, creamy richness

23 chopped green onions – fresh garnish with mild bite

Cooking spray for crockpot

2 tablespoons melted butter – adds richness

1 cup chicken broth or heavy cream – for creamier consistency

Red pepper flakes – for a spicy kick

Instructions

First Step: Prepare Your Ingredients: Spray your crockpot with cooking spray or line it with a slow cooker liner for easy cleanup. Gather all ingredients: thaw or use frozen Potatoes O’Brien with peppers and onions, slice the kielbasa into thin ½-inch rounds, shred Colby Jack cheese, chop green onions, and have your soup and seasonings ready.

Second Step: Layer Potatoes and Kielbasa: Add the frozen Potatoes O’Brien directly into the crockpot no need to thaw. Evenly distribute half of the sliced kielbasa over the potatoes, making sure the sausage is spread throughout for balanced flavor with every bite.

Third Step: Add Cream Soup and Seasoning: Pour the entire can of cream of chicken soup over the potatoes and kielbasa. Sprinkle the ranch seasoning packet evenly on top; if opting for homemade seasoning, mix black pepper, onion powder, garlic powder, smoked paprika, and Italian seasoning to your preference, then sprinkle evenly. Stir the ingredients gently to mix the flavors while keeping most of the layering intact.

Fourth Step: Cook the Dish Slowly: Cover the crockpot and cook on low heat for 4 to 6 hours, checking for tenderness after 4 hours to avoid overcooking. Alternatively, cook on high for 3 to 4 hours if you need the meal sooner. The potatoes should be soft, and the sausage heated through.

Fifth Step: Add Cheese and Finish Cooking: When potatoes are tender, sprinkle the shredded Colby Jack cheese evenly over the top. Replace the lid and let the cheese melt for about 5 to 10 minutes, enriching the dish with creamy, gooey texture.

Final Step: Garnish and Serve: Before serving, sprinkle chopped green onions over the cheesy potatoes kielbasa for a fresh burst of flavor and color. If you like a little heat, add a pinch of red pepper flakes. Serve warm, ideally paired with fresh veggies or a garden salad for a complete and comforting meal.

Notes

🕒 Using frozen Potatoes O’Brien saves prep time since no chopping is needed.
🧀 Shredding cheese from a block improves melting and texture compared to pre-shredded varieties.
🍲 To reduce sodium, omit the ranch seasoning and use fresh or dried herbs and spices instead.
