Ingredients
– 8 ounces uncooked bacon, diced
– 1 yellow onion, diced
– 3 cloves garlic, minced
– 1 (15 ounce) can pinto beans, rinsed and drained
– 1 (15 ounce) can kidney beans, rinsed and drained
– 1 (15 ounce) can northern white beans, rinsed and drained
– Β½ cup ketchup
– ΒΌ cup molasses
– ΒΌ cup spicy BBQ sauce (or favorite BBQ sauce; use sweet one if preferred)
– Β½ cup packed dark brown sugar (can substitute light brown sugar or coconut sugar)
– 1 tablespoon Worcestershire sauce
– Β½ tablespoon yellow mustard (or Dijon mustard)
Instructions
1-Cook diced bacon in a skillet over medium heat until crispy and golden brown.
2-Drain most of the bacon grease, leaving a little in the pan. Add diced onion and cook for 5 to 8 minutes until slightly golden.
3-Add minced garlic during the last minute of cooking and cook for an additional minute. Remove from heat.
4-In a slow cooker, combine the rinsed and drained pinto, kidney, and northern white beans with the cooked bacon, onion, and garlic mixture.
5-Add ketchup, molasses, BBQ sauce, brown sugar, Worcestershire sauce, and mustard. Stir until well combined.
6-Cook on high for 3 to 4 hours or on low for 6 to 7 hours.
