Description

🍊 Bright citrus fruits bring a burst of vitamin‑C rich sunshine to every bite.
🥑 Creamy avocado adds heart‑healthy fats, making this salad both refreshing and satiating.


Ingredients

– 3 4 cups assorted lettuce (e.g., mixed greens, baby kale)

– 2 navel oranges, peeled and sliced

– 2 cara cara oranges, peeled and sliced

– 2 tangerines, peeled and sliced

– 3 mandarin oranges, peeled and sliced

– 1 blood orange, peeled and sliced

– 3 4 Persian cucumbers, thinly sliced

– 2 ripe avocados, cut into wedges

– Kosher salt and freshly ground black pepper, to taste

– Juice of 2 lemons (≈ 4 Tbsp)

– 3 Tbsp red-wine vinegar

– 6 Tbsp extra-virgin olive oil

– 1 shallot, finely minced

– 2 cloves garlic, finely minced

– Kosher salt and freshly cracked black pepper, to taste


Instructions

1- Spread the 3 4 cups of assorted lettuce evenly on a large serving platter or in a bowl to create a fresh base.

2- Arrange the orange slices, cucumber slices, and avocado wedges over the lettuce, then sprinkle lightly with salt and pepper.

3- In a small bowl, whisk together the juice of 2 lemons (about 4 Tbsp), 3 Tbsp red-wine vinegar, 6 Tbsp extra-virgin olive oil, 1 finely minced shallot, and 2 finely minced garlic cloves. Season with salt and pepper to taste.

4- Drizzle the vinaigrette over the salad just before serving, or keep it on the side for everyone to add their own amount.

5- Gently toss everything to mix without mashing the avocado it’s all about keeping that texture intact!

Notes

🍋 Use a sharp knife or mandoline for thin, uniform cucumber slices that blend well with the citrus.
🍊 Pat the orange segments gently with a paper towel to remove excess moisture and keep the salad crisp.
🥑 Add the avocado wedges right before serving to prevent browning; a quick squeeze of lemon juice helps keep them green.
