🥣 Enjoy a crunchy whole‑grain cereal crust that adds texture and a warm cinnamon flavor to a creamy ice‑cream pie.
🍨 The no‑bake, freezer‑set dessert is quick to assemble and perfect for a cool summer treat.

Ingredients

– 2 cups rolled oats Provides the base and hearty texture for the cereal.

– 2 teaspoons ground cinnamon Delivers the signature warm and spicy flavor.

– 1/4 cup brown sugar Adds sweetness and aids in caramelization.

– 2 tablespoons maple syrup Natural sweetener that enhances flavor and helps bind ingredients.

– 2 tablespoons coconut oil Used for toasting and adds a mild richness.

– 1 teaspoon vanilla extract Enhances overall flavor complexity.

– 200 g cinnamon-spiced sweetened corn cereal Forms the buttery, cinnamon-infused crust.

– 80 g unsalted butter, melted Binds the crust together for that crunchy base.

– 2 Tbsp packed light brown sugar Adds sweetness to the crust mixture.

– 1 tsp ground cinnamon Infuses the crust with extra flavor (and more for topping).

– 500 ml premium vanilla ice cream, softened Creates the creamy filling for a cool treat.

– 120 ml heavy whipping cream, lightly whipped Adds richness to the ice cream layer.

– 2 Tbsp granulated sugar Optional, for extra sweetness in the filling.

Instructions

1-First Step: Preheat your oven to 325°F and line a baking sheet with parchment paper to get things ready for toasting.

2-Second Step: In a large bowl, mix 2 cups of rolled oats, 2 teaspoons of ground cinnamon, and 1/4 cup of brown sugar until everything blends well.

3-Third Step: Stir in 2 tablespoons of melted coconut oil, 2 tablespoons of maple syrup, and 1 teaspoon of vanilla extract to coat the dry mix evenly.

4-Fourth Step: Spread the mixture out flat on the baking sheet for even baking and pop it in the oven.

5-Fifth Step: Bake for 20-25 minutes, giving it a stir halfway through to make sure it toasts evenly and turns golden brown.

6-Sixth Step: Let it cool completely on the sheet so it gets extra crispy. For dietary tweaks, use gluten-free oats or vegan swaps as needed.

7-Final Step: Store in a container and enjoy! For more cinnamon ideas, check out our cinnamon French toast bites recipe.

Notes

🥄 Press the crust firmly; a compact base prevents cracks when slicing.
❄️ Keep the pie in the freezer until ready to serve; a fully set pie gives the best texture.
🍽️ For a decorative finish, drizzle a thin ribbon of melted butter mixed with cinnamon over the top before dusting.
