Description

🧁 Experience the perfect harmony of flavors with this irresistible cupcake that captures the essence of classic cannolis in every bite!
🍫 These chocolate-dipped delights are ideal for those who love a fusion of textures and tastes, topped off with a rich chocolate coating.

Ingredients

Scale

Cupcakes:
1 box cake mix, prepared
Optional: 1/4 teaspoon ground cinnamon for added cannoli shell flavor

Cannoli Cream:
15 oz ricotta cheese, well-drained
8 oz mascarpone cheese, at room temperature
1 cup powdered sugar
1 teaspoon vanilla extract
1 cup mini chocolate chips

Chocolate Coating:
2 cups dark chocolate
3 tablespoons coconut oil

Instructions

1. Preheat your oven to 350°F (180°C). Line a muffin tin with paper liners and spray with cooking spray.
2. Prepare the cake mix according to the package instructions. If desired, add 1/4 teaspoon of ground cinnamon to the batter for a hint of cannoli shell flavor.
3. Divide the batter evenly among the muffin liners, filling each about three-quarters full. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean. Allow cupcakes to cool completely.
4. To make the cannoli cream, mix ricotta cheese, mascarpone cheese, powdered sugar, and vanilla extract in a large bowl until smooth and creamy. Fold in the mini chocolate chips.
5. Using a piping bag or a zip-top bag with the tip cut off, fill the center of each cooled cupcake with the cannoli cream, leaving some for decoration.
6. Freeze the filled cupcakes for about 1 hour to firm them up.
7. Melt the dark chocolate and coconut oil together until smooth. Dip the tops of the cupcakes into the melted chocolate.
8. Allow the chocolate to set by chilling the cupcakes in the refrigerator if necessary. Serve and enjoy!

Notes

🧀 Make sure the ricotta cheese is thoroughly drained to prevent any runny cannoli cream.
❄️ Freezing the cupcakes before dipping in chocolate will help the coating set beautifully and neatly.
🍫 For a smoother chocolate dip, consider using melting chocolate wafers instead of standard chocolate chips.
