Ingredients
10 garlic cloves, peeled
2 tablespoons dried oregano
1 teaspoon dried rosemary
1 teaspoon sweet paprika
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
¼ cup (60 ml) extra-virgin olive oil
¼ cup (60 ml) dry white wine
Juice of 1 lemon (approximately 2 tablespoons)
2 dried bay leaves (added later)
2½ lb (approximately 1.1 kg) boneless, skinless chicken breast, trimmed of fat and cut into 1½-inch (approximately 4 cm) cubes
Pita bread (Greek-style or any soft flatbread)
Tzatziki sauce (store-bought or homemade)
1 medium tomato, sliced
½ cucumber, sliced
½ small red onion, thinly sliced
A handful of Kalamata olives, pitted and halved
Instructions
1-In a bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper to create the marinade.
2-Toss the chicken cubes in the marinade, ensuring each piece is fully coated, and let them marinate for at least 30 minutes or up to 2 hours in the refrigerator.
3-Preheat the grill or grill pan to medium-high heat, around 200°C (400°F).
4-Thread the marinated chicken pieces onto skewers, leaving small gaps between pieces for heat circulation.
5-Grill the skewers for 10-12 minutes, turning occasionally to cook evenly until the internal temperature reaches 75°C (165°F).
6-For variations, substitute chicken with tofu or vegetables and adjust cooking time accordingly.
7-Remove from the grill, let rest for 5 minutes, then serve with pita bread, tzatziki, and fresh salad for a complete meal.
