Ingredients
– 4 large flour tortillas
– 1.5 cups shredded sharp cheddar cheese
– 1 cup chopped rotisserie chicken
– 6 pieces crispy cooked bacon
– 2 scallions, finely diced
– 4 tablespoons ranch dressing
– 2 tablespoons oil or butter
Instructions
1-Place one tortilla on a cutting board. Layer with half of the shredded cheese (about 0.75 cups), half of the chopped chicken (0.5 cups), half of the bacon (3 pieces), half of the diced scallions (1 scallion), and about 2 tablespoons of ranch dressing. Top with the remaining half of the shredded cheese (about 0.75 cups). Place a second tortilla on top.
2-Heat oil or butter in a large frying pan over medium heat, swirling to coat the pan. Carefully place the quesadilla in the pan.
3-Cook for 2 to 5 minutes on the first side, until the tortilla is crispy, golden brown, and the cheese begins to melt.
4-Carefully flip the quesadilla and cook for another 2 to 3 minutes, until the second side is crispy and all the cheese is fully melted.
5-Remove the quesadilla from the pan and sprinkle lightly with salt while hot.
6-Repeat the entire process with the remaining ingredients to make the second quesadilla.
7-Serve immediately, offering extra ranch dressing, salsa, and pickled jalapeรฑos on the side if desired.
