Ingredients
Cheese (Mexican cheese blend, Pepper Jack, or feta)
Cooked rice
Ripe avocados
Lime juice
Sea salt
Roasted poblano peppers
Canned green chilies (optional substitute for poblanos)
Fresh garlic
Fresh cilantro
Green onions
Flour tortillas
Olive oil
Salsa verde
White beans (optional for extra protein)
Chili flakes or hot sauce (optional for added heat)
Shelled edamame (optional for added protein)
Spinach or arugula (optional substitution for greens)
Instructions
1. Roast the poblano peppers along with serrano or jalapeño peppers and garlic cloves under a broiler until lightly charred, turning occasionally. Allow them to cool before slicing.
2. Prepare a salsa by mixing freshly chopped cilantro and green onions with lime juice, olive oil, and a pinch of salt. Adjust the flavor as needed.
3. Mash ripe avocados with lime juice and a touch of sea salt until creamy and smooth.
4. Lay a flour tortilla flat and start assembling by spreading a thin layer of mashed avocado on one side.
5. Layer shredded cheese, cooked rice, roasted poblano slices, and a spoonful of salsa verde on top of the avocado layer.
6. Fold the tortilla in half carefully to encase the ingredients without overstuffing.
7. Heat a skillet over medium heat and drizzle with olive oil. Place the quesadilla into the skillet.
8. Cook the quesadilla for 2 to 3 minutes on each side, flipping gently, until the tortilla is golden brown and the cheese is melted.
9. Remove the quesadilla from the skillet and transfer to a cutting board. Let it rest for a minute before slicing into halves or quarters.
10. Serve the quesadillas with sour cream, yogurt, or additional salsa on the side.
Notes
1. Balance the flavors by layering cheese, mashed avocado, rice, and roasted green chilies carefully for a gooey and crispy bite.
2. Use leftover rice and pantry staples like canned green chilies to save time while keeping the dish full of flavor.
3. Roast your poblanos for a smoky kick or customize with extra beans or spicy jalapeños to match your taste preference.
