1/4 teaspoon fine salt (2g)

1/3 to 1/2 cup cookie butter, melted (50-66g)
Optional: 1/2 cup chopped Biscoff cookies (50g) or crushed cookies

Overnight Cinnamon Roll Dough (Traditional):
4 1/4 cups all-purpose flour plus about 1/2 cup as needed (550-615g)
4 1/2 teaspoons (2 packets) instant dry yeast (14g)
1 teaspoon fine salt (6g)
1 cup whole milk, warm (240ml) or dairy-free milk
1/2 cup unsalted butter, room temperature (113g) or vegan butter
1/2 cup granulated sugar (100g)
2 large eggs, room temperature (112g)

Biscoff Cinnamon Roll Frosting / Glaze:
1/2 cup unsalted butter, room temperature (113g)
2 teaspoons vanilla extract (8ml)
1/4 teaspoon fine salt (1g)
1 1/2 cups powdered sugar (190g)
3 tablespoons heavy cream (45ml) or dairy-free milk
1/4 to 1/3 cup cookie butter, melted (50-66g)


Instructions

1. Prepare Filling: Combine dark brown sugar, cinnamon, and salt. Spread softened butter onto rolled dough, sprinkle filling mix evenly, and drizzle melted cookie butter. Add chopped/crushed cookies if desired.

2. Prepare Dough: In a large bowl, mix flour, yeast, and salt. Warm milk with sugar and butter. Gradually combine with flour mixture. Add eggs one at a time, mixing to form a sticky dough. Knead dough until elastic, adding flour as needed. Let rest for 10-20 minutes.

3. Shape Rolls: Roll dough into a 14×18 inch rectangle. Spread filling, roll tightly, and seal edge with water. Cut into 12 pieces using dental floss or a sharp knife.

4. Proofing: Place rolls in a greased 9×13 inch pan. Cover and let rise until doubled, about 45-60 minutes. Optionally, refrigerate overnight and bring to room temperature before baking.

5. Baking: Preheat oven to 360°F (180°C). Bake rolls for 20-30 minutes until golden brown.

6. Frosting: Mix butter, vanilla, and salt until smooth. Add powdered sugar and cream, whisking to desired consistency. Drizzle melted cookie butter on top.

7. Serve: Cool rolls for 10-20 minutes before glazing and serving warm.
