Ingredients

Instructions
1-Preheat the oven: Preheat the oven to 350 degrees Fahrenheit. In a large bowl, cream the butter and sugar until light and fluffy, which takes about 5 to 7 minutes. Beat in the egg and vanilla extract.
2-Mix dry ingredients: In a separate small bowl, whisk together the flour and baking powder; gradually add this dry mixture to the creamed butter mixture, mixing well. Fold in the shredded coconut and chopped walnuts.
3-Assemble the bars: Press two-thirds of the dough into the bottom of a greased 13 by 9-inch baking pan. Spread the apricot preserves evenly over the dough. Crumble the remaining dough over the preserves layer.
4-Bake and cool: Bake for 30 to 35 minutes or until the top is golden brown. Allow to cool completely in the pan on a wire rack before cutting into bars.
