60ml milk
1 large egg
150g all-purpose flour
75g granulated sugar
1/2 teaspoon kosher salt
113g unsalted butter (brown butter)
30ml water
3 medium apples, diced
30g unsalted butter
100g light brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon kosher salt
Half of the pie crumb mixture (about 75g)
60ml milk
1/4 teaspoon kosher salt
113g unsalted butter at room temperature
120g confectioners’ sugar
Instructions
1. Preheat oven to 350°F (175°C). For the cake, cream butters and sugars, add eggs, then mix in buttermilk, oil, and vanilla. Fold in flour, baking powder, and salt. Bake in prepared pans for 30-35 minutes. Cool.
2. Make apple cider soak by heating cider, sugar, and cinnamon until thickened. Cool.
3. For cheesecake, mix cream cheese, sugar, then incorporate remaining ingredients. Bake at 325°F (163°C) until set, about 30 minutes. Cool.
4. Prepare pie crumbs by mixing flour, sugar, and butter into clumps. Bake at 350°F (175°C) until golden. Cool.
5. Cook apples with butter, sugar, cinnamon until tender. Cool.
6. For frosting, blend pie crumbs with milk, mix with butter and sugar until smooth.
7. Assemble by layering cake, soak, cheesecake, crumbs, and apple filling. Repeat layers, frost, and garnish.
8. Freeze cake for 12 hours, then thaw 3 hours before serving.
