120g light brown sugar
6 large eggs
220g buttermilk
130g neutral oil
4g vanilla extract
370g all-purpose or cake flour
8g baking powder
8g kosher salt
60g apple cider or apple juice
2 tablespoons brown sugar
1 teaspoon ground cinnamon
550g cream cheese
300g granulated sugar
12g cornstarch
4g kosher salt
50g milk
2 large eggs
440g all-purpose flour
36g granulated sugar
6g kosher salt
230g browned butter
40g water
800g medium apples
Juice of 1 lemon
28g unsalted butter
300g light brown sugar
2g ground cinnamon
2g kosher salt
175g pie crumb
110g whole milk
40g unsalted butter at room temperature
4080g confectioners’ sugar


Instructions

1. Brown 80g of butter over medium heat, cool. Beat unsalted butter, browned butter, granulated and brown sugar until fluffy. Add eggs one by one. Mix in buttermilk, oil, and vanilla. Add flour, baking powder, salt. Bake at 350°F (180°C) for 30-35 minutes. Cool.
2. Simmer apple cooking liquid, brown sugar, and cinnamon for soak, or use apple cider with ingredients.
3. Beat cream cheese, add sugar, then blend in cornstarch, salt, milk, and eggs. Mix for 5 minutes. Bake at 300°F (150°C) for 15 minutes. Chill.
4. Mix flour, sugar, and salt. Add browned butter and water, create clusters. Bake at 350°F (180°C) for 25 minutes, stir halfway.
5. Soak apples in lemon water, drain and cook with butter, sugar, cinnamon, and salt till tender. Refrigerate.
6. Blend pie crumb with milk and salt to paste. Beat butter and confectioners’ sugar, add crumb paste. Chill.
7. Assemble: Cut cakes, layer with soak, cheesecake, crumb, and apple filling. Top with cake layer, frost, and garnish.
8. Freeze for 12 hours, thaw 3 hours before serving. Store refrigerated or frozen.
