Ingredients
1 ½ cups graham cracker crumbs (or digestive biscuits)
¼ cup brown sugar
5 to 6 tablespoons unsalted butter, melted

3 tablespoons packed brown sugar
1 to 1 ½ teaspoons ground cinnamon
⅛ to ¼ teaspoon ground nutmeg (optional)
Juice of half a lemon (optional)
1 teaspoon arrowroot powder or cornstarch (optional)
¾ cup all-purpose flour (about 90 grams)
⅓ cup packed brown sugar
½ cup quick oats (optional)
¼ teaspoon salt
½ teaspoon cinnamon
4.5 to 6 tablespoons unsalted butter, room temperature or melted
1 teaspoon vanilla extract (optional)
4 packages cream cheese (8 oz each / 907 grams total), softened
1 cup packed brown sugar
¼ cup granulated sugar
½ cup sour cream or full-fat plain Greek yogurt
⅓ cup applesauce (optional)
3 large eggs, room temperature
1 large egg yolk, room temperature
1 tablespoon vanilla extract
1 tablespoon all-purpose flour (optional)
½ teaspoon salt
½ teaspoon ground cinnamon
Instructions
1. Preheat oven to 325ºF (160ºC). Grease and line an 8″ to 10″ springform pan with parchment and wrap in foil.
2. Mix graham cracker crumbs, brown sugar, and melted butter; press into the pan. Bake for 10-12 minutes, then cool.
3. Toss apples with brown sugar, cinnamon, nutmeg, lemon juice, and arrowroot or cornstarch. Cook in a pan until softened, then cool.
4. Mix flour, oats, brown sugar, salt, and cinnamon. Add butter and vanilla; mix until crumbly. Reserve 1 cup for topping.
5. Beat cream cheese until smooth. Gradually add sugars, then mix in sour cream and applesauce.
6. Add eggs one at a time and yolk, followed by vanilla, salt, cinnamon, and optional flour.
7. Spread half of the cheesecake batter in pan, layer with apples and crumble, then remaining batter. Top with crumble.
8. Place in a roasting pan with hot water; bake for 60-75 minutes. Allow to set in the oven for 1 hour.
9. Cool on a rack, then refrigerate for at least 6 hours before serving.
