Ingredients
1 French baguette, cut into Β½-inch diagonal slices
Olive oil for brushing
Salt and freshly ground black pepper
1 large garlic clove, halved
1 Β½ cups fresh whole milk ricotta cheese at room temperature
1 to 2 tablespoons extra virgin olive oil
2 to 3 teaspoons whole milk, cream, or half-and-half
Roasted cherry tomatoes with honey and red wine vinegar
Prosciutto
Hot honey
Fresh basil or your choice of fresh herbs
Instructions
1. Preheat the oven to 375 degrees F. Arrange baguette slices on baking sheets in a single layer. Brush with olive oil and season with salt and pepper. Flip and repeat. Bake for 5 to 8 minutes until the bottom is light golden and crisp. Turn slices over and bake for 5 to 6 additional minutes until golden on both sides. Rub each warm toast with the flat side of a halved garlic clove.
2. For the whipped ricotta, combine the ricotta, olive oil, and milk or cream in a bowl. Season with salt and pepper, and beat with a spatula until creamy and smooth. Use an immersion blender for a finer texture if preferred. Refrigerate for up to three days if prepared ahead of time.
3. Serve by placing the whipped ricotta in a bowl with a drizzle of olive oil alongside the toasts and toppings. Allow guests to assemble or spread the ricotta over the toasts, add toppings, and arrange on a platter.
