Ingredients

3 cups cubed watermelon
1 cup diced English cucumber
1/4 cup thinly sliced red onion
1/2 cup crumbled feta cheese
1 avocado, cubed
1/4 cup torn fresh mint or basil leaves
1 jalapeño or serrano pepper, thinly sliced (optional)
Instructions
1. In a small bowl, whisk together the olive oil, lime juice, honey, minced garlic, and a pinch of salt to create the dressing.
2. Arrange the cubed watermelon, diced cucumber, and sliced red onion on a serving platter.
3. Drizzle half of the dressing over the arranged salad base.
