Ingredients
Pork ribs, 2-3 pounds
Green beans, 1 pound, trimmed
Mini potatoes, 1 pound, halved or quartered (optional)
Paprika, 2 teaspoons
Chili powder, 1 teaspoon
Onion powder, 1 teaspoon
Garlic powder, 1 teaspoon
Coconut sugar or brown sugar, 1 tablespoon
Ground cumin, 1 teaspoon
Sea salt, 1 teaspoon
Black pepper, 1/2 teaspoon
Cayenne pepper (optional), 1/4 teaspoon
Ground cinnamon, 1/4 teaspoon
Honey, 2 tablespoons
Soy sauce, 1 tablespoon
Apple cider vinegar, 1 tablespoon
Olive oil, 1 teaspoon + additional for roasting vegetables
Instructions
1. Preheat your oven to 300°F (150°C) and prepare the ribs by removing the membrane (silver skin) from the back using a paring knife. Gently pull the membrane off to ensure even cooking and tenderness.
2. Pat the ribs dry with paper towels and coat them evenly with the dry spice rub mix, making sure all areas are covered. Let the ribs rest for 15 minutes to absorb the flavors.
3. Prepare the green beans by washing and trimming them. Toss the green beans and mini potatoes (if using) in olive oil with a pinch of salt, pepper, and optional minced garlic or chili flakes. Keep the beans and potatoes separate for now.
