Instructions

1. Preheat the oven to 350Β°F and grease a standard-sized loaf pan with butter. Optionally, line with parchment paper for easier removal.
2. Combine Β½ cup granulated sugar with 2 teaspoons of cinnamon, and sprinkle a few tablespoons inside the greased loaf pan to coat it; set aside.
3. In a large bowl, whisk together the mashed bananas, melted butter, sugar, eggs, Greek yogurt, and vanilla extract until well combined.
4. In another bowl, whisk together the flour, baking soda, and salt. Gently fold the dry ingredients into the banana mixture until just combined.
5. Pour half of the batter into the prepared loaf pan. Sprinkle half of the remaining cinnamon sugar mixture over the batter. Add the remaining batter, followed by the rest of the cinnamon sugar on top.
6. Bake for about 60 minutes, or until a knife inserted in the center comes out clean. Let the bread cool in the pan for about 15 minutes.
7. For an extra burst of cinnamon flavor, brush the loaf with melted butter and either roll it in remaining cinnamon sugar or sprinkle and pat it on all sides after removing from the pan.
8. Allow the bread to cool completely before slicing to ensure it holds its shape.
