1. 1 lb chicken breast, thinly sliced
2. 8 oz fresh shiitake mushrooms, sliced
3. 1/2 medium onion, sliced
4. 2 tbsp vegetable oil
5. 1 tbsp cornstarch
6. 2 tbsp light soy sauce
7. 1 tbsp rice wine (michiu)
8. 1 tsp brown sugar
9. 1 tbsp oyster sauce
10. Salt, to taste
11. Chopped green onions (optional)
12. Fresh ginger and garlic (optional)
13. Vegetables like asparagus or sugar snap peas (optional)


Instructions

1. Slice the chicken breast into thin, bite-sized strips and prepare all other ingredients by cleaning and slicing the shiitake mushrooms and onions.
2. In a separate bowl, mix the marinade ingredients (cornstarch, soy sauce, rice wine, and brown sugar) until smooth, then coat the chicken slices thoroughly. Let the chicken marinate for at least 15 minutes.
3. Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat. Add the sliced onions and stir-fry for about 1 minute until they soften and release their aroma.
4. Add the marinated chicken to the wok. Cook for 2–3 minutes, stirring frequently, until the chicken is slightly browned but not fully cooked. Remove the chicken and onions from the pan and set aside.
5. In the same wok, add another tablespoon of vegetable oil if needed, and toss in the sliced shiitake mushrooms. Stir-fry for 2–3 minutes until the mushrooms soften and release their juices.
6. Optionally, add freshly grated ginger or minced garlic to the wok with the mushrooms for extra depth and flavor.
7. Return the cooked chicken and onions to the pan with the mushrooms, and stir everything together evenly.
8. Add 1 tablespoon of oyster sauce and a pinch of salt (to taste) to the ingredients. Stir-fry for 2–3 minutes until the chicken is fully cooked and the sauce coats all the ingredients.
9. Once cooked, transfer the Shiitake Chicken Stir-Fry to a serving dish and garnish with freshly chopped green onions or sesame seeds for added crunch and visual appeal.
10. Serve the dish immediately alongside steamed rice or your favorite side dish for a wholesome and flavorful meal.
