Onion, finely chopped
Bell pepper, finely chopped
Egg
Worcestershire sauce
Mayonnaise
Salt
Black pepper
Oil for frying
Optional: Cajun seasoning
Optional: Lemon juice

Instructions
1. Drain the canned salmon and remove any bones and skin.
2. In a mixing bowl, combine the salmon with cornmeal or breadcrumbs, flour, chopped onion, chopped bell pepper, egg, Worcestershire sauce, and seasonings.
3. Add mayonnaise to help bind the mixture and keep the patties moist.
4. Mix all ingredients thoroughly until well combined.
5. Shape the mixture into evenly sized patties.
6. Place the patties in the refrigerator and chill for about 15-30 minutes to help them hold together while cooking.
7. Heat oil in a skillet over medium heat.
8. Carefully place the salmon patties in the heated oil.
9. Pan-fry each patty for about 3-4 minutes per side or until golden brown and crispy.
10. Remove the cooked patties from the skillet and place them on a paper towel-lined plate to drain excess oil.
11. Serve hot with your choice of grits, rice, biscuits, or eggs.
12. Add a dipping sauce such as remoulade, tartar sauce, or spicy mayo for extra flavor.
13. Store any leftovers in an airtight container in the refrigerator for up to 3 days or freeze for longer storage.
14. Reheat leftovers in a skillet to maintain crispiness before serving.
Notes
Chill the formed patties in the refrigerator for at least 30 minutes before frying to help them hold their shape.
Use mayonnaise in the mixture to keep the croquettes moist and prevent them from drying out.
Reheat leftovers in a skillet instead of the microwave to maintain their crispy texture.
