¼ teaspoon salt
1 cup (225g) unsalted butter, softened to room temperature
1 teaspoon pure vanilla extract (optional)
1 teaspoon almond extract (optional)
Green food coloring (optional)
Optional: ¼ cup chopped almonds


Instructions

1. Finely chop or pulse the pistachios to a coarse meal, keeping some larger pieces for texture.
2. In a bowl, combine the pistachios, flour, ¼ cup powdered sugar, and salt.
3. In a separate bowl, cream the softened butter with vanilla and almond extracts (if using) until smooth.
4. Mix the butter mixture into the dry ingredients until a soft dough forms. Add green food coloring if desired.
5. Cover and chill the dough for at least 30 minutes.
6. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
7. Shape the dough into balls, spacing them about 1 to 2 inches apart on the baking sheet.
8. Bake for 10 to 15 minutes or until the edges are lightly browned.
9. Allow the cookies to cool on the baking sheet for about 5 minutes, then roll them in powdered sugar while still warm.
10. Transfer cookies to a wire rack to cool completely, re-rolling in powdered sugar if necessary.
