Ingredients

Scale

1. 1-1.5 pounds ground beef or a combination of ground beef and sausage
2. 1 large onion, chopped
3. 1 green bell pepper, chopped
4. Mushrooms (optional), chopped
5. Olive oil or ghee (for sautéing)
6. 1/2 cup bread crumbs
7. 1 egg (for binding)
8. 1/2 teaspoon garlic powder
9. Salt and pepper to taste
10. 3 tablespoons Worcestershire sauce
11. 1/2 cup milk or whole milk
12. 6-8 slices of provolone, mozzarella, or a combination of cheeses
13. Ketchup (optional)
14. Coconut aminos (optional)
15. Adobo seasoning (optional)
16. Onion powder (optional)
17. Cashew cheese sauce (optional for paleo/Whole30 adaptation)

Instructions

1 Preheat the oven to 350°F to prepare for even cooking.
2 Sauté chopped onions and green bell peppers in olive oil or ghee over medium heat until tender for enhanced flavor.
3 In a large mixing bowl, combine ground beef, sautéed vegetables, bread crumbs, egg, garlic powder, Worcestershire sauce, milk, salt, and pepper, mixing thoroughly by hand until well blended.
4 Lightly grease a loaf pan or line it with parchment paper, then spoon half the meat mixture into the pan and spread evenly.
5 Layer your choice of cheese slices, such as provolone or mozzarella, over the first layer of meat mixture.
6 Add the remaining meat mixture on top, pressing gently to seal the cheese layer inside.
7 Bake the meatloaf in the preheated oven for 40-55 minutes, ensuring the internal temperature reaches 160°F for thorough cooking.
8 In the final 10-15 minutes of baking, optionally add more cheese on top for extra cheesy flavor.
9 Remove from the oven and let the meatloaf rest for a few minutes to lock in juices and ensure moist slices.
10 Slice to your desired thickness and serve with sides like garlic mashed potatoes or sautéed vegetables for a complete meal.

Notes

1. Use a combination of ground beef and sausage for a richer and juicier meatloaf.
2. Experiment with different cheese options like provolone, mozzarella, or even sharp cheddar for a unique flavor twist.
3. Sauté your vegetables like onions and bell peppers beforehand to bring out their natural sweetness and enhance the overall taste.
