Celery: 2-4 cups, chopped or diced.
Garlic: 3-6 cloves, minced (optional).
Leeks: 2 leeks, halved and thinly sliced (optional).
Herbs: Fresh sage, parsley, rosemary, thyme, and marjoram.
Seasonings: Salt, black pepper, and poultry seasoning to taste.
Broth/Stock: 1-2 ½ cups of chicken or vegetable broth.
Eggs: 2 large eggs.


Instructions

1. Begin by preparing the bread. If the bread is fresh, dry it in the oven at 350°F for about 10-15 minutes. Once dried, cut or tear the bread into 1-inch cubes.
2. In a large skillet, melt ¾ cup of butter over medium heat. Add and sauté the chopped onions, celery, garlic, and optional leeks until they are soft and fragrant. Stir frequently for about 10 minutes to avoid browning or burning.
3. In a large bowl, combine the sautéed vegetables with fresh herbs and seasonings. Add the bread cubes and mix well to ensure even distribution of the flavors.
4. In a separate bowl, beat the eggs and whisk them together with the broth/stock. Gradually pour this liquid mixture over the bread and vegetable mixture, allowing the bread to fully absorb the liquid.
5. Prepare a buttered 9×9 baking dish and transfer the combined stuffing mixture into it. Dot the top with additional butter pieces for a richer taste and golden texture. Cover the dish with foil to prevent over-browning in the initial baking stage.
6. Preheat your oven to 350°F. Place the covered dish in the oven and bake for 30 minutes to allow the flavors to meld.
7. Remove the foil and continue baking for an additional 15-20 minutes, or until the top is golden brown. For an extra crispy top, broil the stuffing for 1-2 minutes, monitoring closely to avoid burning.
