Onion (1 large, chopped)
Ginger (1 thumb-sized piece, sliced)
Fish Sauce (2-3 tablespoons)
Sinigang Mix or Tamarind Powder (1 packet or 1 tablespoon)
Green Chilies or Long Green Peppers (2-3 pieces)
Bay Leaves (2 pieces)
Salt and Pepper to taste
Water or Beef Broth (4-5 cups)

Instructions

Steps to Make Papaitan Recipe: A Bitter Filipino Soup

1. Prepare the Innards: Wash beef or goat innards (tripe, kidney, liver, heart, and intestines) thoroughly under running water until clean and odor-free. Boil them in water with a slice of ginger for 15 minutes to eliminate any unpleasant smell. Allow them to cool, then slice them into small pieces.

2. Prepare Aromatics: Mince garlic, chop onions, slice ginger, and slice green chilies (if using). Set them aside for sautéing.

3. Sauté Aromatics: Heat 2-3 tablespoons of oil in a large pot over medium heat. Add ginger slices and sauté until fragrant. Add minced garlic and chopped onions, cooking until soft and translucent.

4. Cook the Innards: Add the sliced innards to the pot. Stir well to coat them in the sautéed aromatics. Cook for 5-7 minutes, stirring occasionally, until the innards are lightly browned.

5. Add the Broth: Pour 4-5 cups of water or beef broth into the pot to cover the innards. Bring it to a boil, then add optional bay leaves for added flavor. Lower the heat and simmer for 45 minutes to 1 hour, or until the innards are tender.

6. Incorporate Sour and Bitter Flavors: Add 1 packet of Sinigang mix or 1 tablespoon of tamarind powder to give the soup a tangy flavor. Slowly stir in 1 tablespoon of beef bile, tasting as you go, and adjust to your preferred level of bitterness.

7. Season the Soup: Add 2-3 tablespoons of fish sauce along with salt and pepper to taste. Stir thoroughly to ensure the flavors are well combined. Let the soup simmer for another 5-10 minutes.

8. Optional Spicy Kick: Add sliced green chilies for a spicy edge if desired.

9. Serve the Papaitan: Serve the hot Papaitan soup in bowls, paired with a side of steamed rice to balance its bold flavors. You can also add a squeeze of calamansi or lemon juice for added tanginess before serving.

10. Enjoy with a Personal Twist: Personalize your Papaitan by experimenting with ingredients like bitter greens, extra spices, or even omitting bile to suit your dietary preferences.

Notes

1. Start with thoroughly cleaning and prepping the innards to ensure the best flavor and texture.
2. Balance the bitterness of the dish by carefully adding bile and complementing it with a touch of sourness from calamansi or tamarind.
3. Experiment with variations like adding green chilies for spice or substituting bitter greens for bile to suit different preferences.
