Instructions
1. Prepare the fish by rinsing firm-fleshed fish fillets like tilapia, cod, or basa under cold water and pat them dry with a paper towel. Season the fillets lightly with salt, white pepper, and a teaspoon of light soy sauce. Let them marinate for 10-15 minutes, or up to 1 hour for deeper flavor. 2. Slice fresh ginger thinly into matchstick pieces and cut scallions into small sections, separating the white and green parts.
