No Bake Fruit Tart with Greek Yogurt and Fresh Berries on a Graham Cracker Crust

Description

🍓 Enjoy a refreshing and light dessert that’s perfect for beating the heat without turning on the oven.
🥄 Filled with creamy Greek yogurt and topped with fresh berries, this tart is as nutritious as it is delicious!


Ingredients

Crust:
15 pitted Medjool dates (about 230g), soaked in warm water for 10 minutes
¾ cup (100g) unsalted cashews
¾ cup (100g) unsalted almonds

Filling:
1 cup (250g) Greek yogurt (plain or flavored; vanilla can be used for sweetness)
Optional: 2-3 teaspoons honey to sweeten plain yogurt

Fruit Topping:
Assorted fresh sliced fruit (such as kiwi, mandarin oranges, blueberries, blackberries, strawberries)
Optional: 2 tablespoons apricot preserves mixed with 1 tablespoon water for glazing


Instructions

1. Lightly spray the bottom and sides of a tart pan, pie plate, or 9-inch springform pan with nonstick spray and line with parchment paper for easy removal.
2. Soak the dates in warm water for 10 minutes, then drain and cut in half.
3. In a food processor or blender, pulse the dates, cashews, and almonds until a sticky, moist dough forms. Press this mixture evenly into the prepared pan, covering the bottom and sides to form the crust.
4. Spread the Greek yogurt evenly over the crust. If desired, add honey to the yogurt beforehand to reduce tartness.
5. Arrange the fresh fruit decoratively on top of the yogurt layer. To prevent browning on delicate fruits like bananas or apples, brush slices lightly with lemon juice.
6. For a glossy finish, brush the fruit with the apricot preserves diluted in water.
7. Serve immediately or refrigerate uncovered for up to 1 day. Store leftovers covered in the refrigerator for up to 3 days.

Notes

🍽️ The crust can be prepared a day ahead and refrigerated until ready to use.
🌰 Raw or toasted nuts can be used depending on preference.
🍯 Substitute raisins or dried cranberries for dates if desired.
