Instructions

1. Bring a large pot of salted water to a boil and add 8 oz of linguine. Cook according to package instructions until al dente. Reserve 1/4 cup of pasta water, then drain and set aside.
2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
3. Add 1 lb of bite-sized chicken pieces, seasoned with salt, pepper, and Italian seasoning.
4. Cook the chicken for 5-6 minutes, turning occasionally, until golden brown and cooked through. Remove and set aside on a plate.
5. In the same skillet, melt 2 tablespoons of unsalted butter over medium heat.
6. Add minced garlic to the skillet and sauté for 1 minute until fragrant.
7. Squeeze the juice of half a lemon into the skillet and stir well.
8. Return the cooked chicken bites to the skillet and toss to coat evenly in the garlic butter sauce.
