Ingredients
2 ½ cups (about 312.5 g) all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon salt
1 tablespoon lemon zest (from about 2–3 lemons)
1 ½ cups (300 g) granulated sugar
1 cup (227 g) unsalted butter, at room temperature
2 large eggs, at room temperature
1 large egg yolk (optional but adds richness)
1 tablespoon lemon juice (freshly squeezed)
1 teaspoon vanilla extract
¼ teaspoon lemon extract (optional, for extra lemon flavor)
2 tablespoons granulated sugar
1 tablespoon sparkling sugar (or raw sugar as an alternative)
¾ to 1 cup powdered sugar, sifted
1 to 3 tablespoons freshly squeezed lemon juice
1 teaspoon lemon zest (optional)
Instructions
1. Preheat oven to 350°F (175°C). Grease and line a 9×13-inch baking pan with parchment paper.
2. In a medium bowl, whisk together flour, baking powder, salt, and lemon zest.
3. In a large bowl, beat butter on medium speed until creamy. Gradually add sugar and beat until light and fluffy.
4. Add eggs one at a time, mixing well after each addition, then mix in egg yolk if using.
5. Mix in lemon juice, vanilla extract, and lemon extract, if using, until combined.
6. Gradually add flour mixture and mix until fully incorporated without overmixing.
7. Spread batter evenly into prepared pan. Sprinkle granulated and sparkling sugar over top.
8. Bake for 22 to 28 minutes until edges are lightly golden and a toothpick inserted in the center comes out clean.
9. Cool completely in the pan on a wire rack.
10. For glaze, whisk powdered sugar with lemon juice and zest until smooth. Drizzle over cooled bars, then let set before slicing.
