2 ΒΌ cups (280 g) all-purpose flour
ΒΌ teaspoon salt

4 ounces (115 g) cream cheese, room temperature
1 cup (125 g) powdered sugar
1–3 tablespoons fresh lemon juice
1 tablespoon lemon zest


Instructions

1. Preheat the oven to 350Β°F (180Β°C). Line a 9Γ—9-inch (23Γ—23 cm) baking pan with parchment paper, leaving an overhang for easy removal.

2. Cream the butter with a hand mixer in a large bowl until smooth.

3. In a separate bowl, thoroughly whisk the sugar with lemon zest, then add to the butter and cream together.

4. Add vanilla extract and eggs, one at a time, mixing well after each addition.

5. If using, melt white chocolate chips and blend into the butter mixture. Stir in the fresh lemon juice.

6. Whisk salt into the flour, then gently fold the flour into the wet ingredients until just combined.

7. Pour the batter evenly into the prepared pan.

8. Bake for 35-38 minutes. Check at 25 minutes and tent with foil if edges brown too quickly.

9. Cool brownies completely in the pan.

10. For the topping, beat cream cheese until smooth, then gradually mix in powdered sugar, lemon juice, and lemon zest until creamy and spreadable.
