Diced green chiles
Lime juice (¼ cup to 2 tablespoons)
Chopped cilantro
1 cup grated cheddar cheese
1 cup grated Monterey Jack cheese
Tortillas (flour or corn, any size from burrito size to 6-8 inches)
Optional: sour cream
Optional: black beans
Optional: corn
Optional: diced jalapeño
Optional: onion
Optional: bell pepper
Optional: garlic
Optional: mozzarella cheese
Optional: pepper jack cheese
Optional: vegan cheese

Instructions

1. Preheat the oven to 350°F (175°C) to prepare for baking the enchiladas.
2. Prepare the baking dish by pouring 1 cup of enchilada sauce evenly into a 9×13 baking dish.
3. Mix the filling by combining shredded or cubed turkey, softened cream cheese, green chiles, lime juice, chopped cilantro, and a portion of the grated cheese in a large bowl. Blend thoroughly until the mixture is smooth.
4. Fill and assemble the enchiladas by placing the turkey filling inside each tortilla, rolling them gently, and placing them seam side down into the prepared baking dish.
5. Pour the remaining enchilada sauce over the prepared enchiladas in the baking dish to cover them evenly.
6. Sprinkle the remaining grated cheese on top of the sauce to create a flavorful, gooey topping.
7. Bake the assembled enchiladas in the oven for 25-30 minutes or until the cheese is melted and the sauce is bubbling.
8. Remove the enchiladas from the oven and allow them to cool slightly for a few minutes before serving.
9. Garnish the enchiladas with fresh chopped cilantro or your preferred toppings, such as diced avocado, sour cream, or salsa.
10. Serve the enchiladas with your favorite sides, such as green bean and potato casserole or a fresh salad.

Notes

1. Use leftover turkey as a budget-friendly filling for enchiladas and customize flavors with your favorite spices or sauces.
2. Add fresh vegetables like diced bell peppers or sautéed onions for extra nutrition and vibrant flavor in your enchilada filling.
3. Choose the right tortilla, like whole wheat or gluten-free options, to match your dietary preferences and make the dish healthier.
