Honey or keto honey/allulose honey
Olive oil or avocado oil
Chipotle peppers in adobo sauce
Lime juice or lime zest
Garlic, freshly minced
Cumin

Scallions or cilantro (optional)

Dried oregano (optional)
White balsamic vinegar (optional)


Instructions

1. Prepare the marinade by combining ingredients such as chipotle peppers in adobo sauce, lime juice, olive oil, garlic, cumin, salt, and pepper. Optional additions like honey, chili powder, or white balsamic vinegar can be included for extra flavor complexity. Blend the mixture until smooth.
2. Place the boneless, skinless chicken breasts or thighs in a sealed bag or container. Pour the marinade over the chicken, ensuring all pieces are well coated. Marinate for at least 30 minutes, or for a deeper flavor, marinate overnight in the refrigerator.
3. Preheat the grill to medium-high heat and ensure it is well-oiled to prevent sticking. This step also helps ensure the chicken cooks evenly and gains beautiful grill marks.
4. Place the chicken on the grill. Cook chicken breasts for 7-8 minutes per side and thighs for 4-5 minutes per side over direct heat. For thighs, transfer them to indirect heat to finish cooking until they reach an internal temperature of 165°F. Chicken breasts should be cooked to an internal temperature of 160°F.
