2 pounds fresh green beans, trimmed and cut into 2-inch pieces
2 pounds baby creamer or Yukon gold potatoes, halved
1 pound smoked sausage or kielbasa, sliced
1 large onion, diced
3 cloves garlic, minced
2 tablespoons olive oil
1 cup chicken broth
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper to taste
1 cup shredded cheddar cheese (optional)
1/2 cup crispy fried onions (optional)


Instructions

1. Preheat your oven to 375°F (190°C).
2. In a large skillet, heat olive oil over medium heat. Add sliced sausage and cook until lightly browned, about 5 minutes.
3. Add diced onion and minced garlic to the skillet. Sauté until the onion becomes translucent, approximately 3-4 minutes.
4. In a large mixing bowl, combine trimmed and cut green beans, halved potatoes, and the sausage mixture. Toss gently to mix.
5. Transfer the mixture to a 9×13 inch baking dish.
6. Pour chicken broth over the vegetables and meat. Sprinkle with dried thyme, rosemary, salt, and pepper.
7. Cover the dish tightly with aluminum foil.
8. Bake the casserole for 45 minutes.
9. Remove the foil and continue baking for an additional 15-20 minutes, or until the potatoes are tender when pierced with a fork.
10. If desired, sprinkle shredded cheddar cheese and crispy fried onions on top during the last 5 minutes of baking.
11. Allow the casserole to cool for 5-10 minutes before serving.
