Ingredients
10 tablespoons (145g) unsalted butter
1 ΒΌ cups (250g) granulated sugar
ΒΎ cup plus 2 tablespoons (75g) unsweetened cocoa powder
1 teaspoon vanilla extract
ΒΌ teaspoon fine sea salt
2 large cold eggs
Β½ cup (65g) all-purpose flour
2/3 cup (80g) chopped walnuts, pecans, or chocolate chips (optional)
Instructions
1. Preheat oven to 325Β°F (162Β°C) and position a rack in the middle. Line an 8-inch square baking pan with parchment paper or aluminum foil, leaving an overhang for easy removal.
2. Melt the butter in a medium saucepan over medium-low heat, being careful not to brown it. Remove from heat.
3. Stir in the granulated sugar, cocoa powder, vanilla extract, and salt while the butter is still hot. Blend thoroughly.
4. Allow the mixture to cool until just warm, about 5 to 10 minutes.
5. Add the cold eggs one at a time, stirring vigorously and thoroughly after each addition until the batter is smooth and thick.
6. Using a spoon or spatula, beat in the flour until the batter pulls away from the sides of the bowl, about 40 to 50 strokes.
7. Fold in nuts or chocolate chips if using.
8. Spread the batter evenly into the prepared pan, smoothing the surface.
9. Bake for 20 to 30 minutes, until the edges are set and look dry but the center remains slightly underbaked. A toothpick should come out with a few moist crumbs.
10. Cool the brownies completely in the pan before removing. Chill in the refrigerator for 1 to 2 hours before cutting into 16 squares.
