Ingredients
20 Oreo cookies (with filling)
3 tablespoons unsalted butter, melted
1 1/3 cups granulated sugar
4 large eggs
8 ounces bittersweet or semisweet baking chocolate, melted
2 teaspoons vanilla extract
10 tablespoons unsalted butter, softened
1 1/3 cups heavy cream, cold
4 teaspoons powdered sugar
1 cup heavy cream, cold
2 tablespoons powdered sugar
1 teaspoon vanilla extract
Optional: chocolate shavings, cocoa powder, or chocolate curls for garnish
Instructions
1. Preheat the oven to 350°F (177°C). Grease a pie dish with cooking spray.
2. Process Oreo cookies into fine crumbs. Mix with melted butter until moistened.
3. Press crumbs into the bottom and sides of the pie dish. Bake for 10 minutes until set, then cool.
4. Combine sugar and eggs in a heatproof bowl, place over simmering water. Whisk until 160°F.
5. Remove from heat, stir in melted chocolate and vanilla. Cool to room temperature.
6. Cream butter until light, then mix in chocolate mixture and beat for 5 minutes until fluffy.
7. Whip cold heavy cream to stiff peaks, fold into chocolate mixture. Pour into crust and smooth.
8. Refrigerate for at least 6 hours or overnight.
9. For the topping, whip cream with powdered sugar and vanilla to stiff peaks.
10. Top the chilled pie with whipped cream and garnish as desired before serving.
