Ingredients
6–8 bone-in, skin-on chicken thighs
Salt
Freshly ground black pepper
2 teaspoons garlic powder
1 teaspoon paprika
1 teaspoon dried thyme
1 cup chicken stock
1 cup heavy cream
1/2 cup freshly grated Parmesan cheese
2 tablespoons unsalted butter
4 cloves garlic, minced
1 tablespoon all-purpose flour
1 teaspoon Dijon mustard
Fresh parsley, chopped (for garnish)
Instructions
1. Preheat your oven to 375°F (190°C).
2. Pat chicken thighs dry with paper towels to ensure crispy skin.
3. In a small bowl, mix salt, black pepper, garlic powder, paprika, and dried thyme.
4. Season the chicken thighs generously on both sides and under the skin using the spice blend.
5. Choose a 9×13-inch baking dish or oven-safe skillet that fits the chicken thighs without overcrowding.
6. Pour the chicken stock into the bottom of the baking dish to keep the chicken moist and form the sauce base.
7. Arrange chicken thighs skin side up in the dish, ensuring they’re not overlapping.
8. Cover the baking dish tightly with aluminum foil.
9. Bake the covered dish in the preheated oven for 30-35 minutes.
10. After 30-35 minutes, carefully remove the foil and continue baking uncovered for an additional 25-30 minutes to crisp the skin.
11. While the chicken continues baking, whisk together heavy cream and all-purpose flour in a medium bowl until smooth.
12. Add Dijon mustard to the cream mixture and whisk to combine.
13. Once the chicken finishes the initial bake, pour the cream mixture over and around the chicken thighs.
14. Sprinkle freshly grated Parmesan cheese evenly over the dish.
15. In a small saucepan, melt unsalted butter over medium heat.
16. Add minced garlic to the melted butter and sauté for about one minute until fragrant.
17. Drizzle the garlic butter over the chicken and cream mixture in the baking dish.
18. Return the uncovered dish to the oven and bake for another 25-30 minutes until the sauce thickens and the skin turns golden brown.
19. Occasionally baste the chicken thighs with the pan juices to enhance moisture and flavor.
20. Check the internal temperature of the chicken with a meat thermometer. It should reach 165°F (74°C).
21. Optional: Broil the chicken for 2-3 minutes to achieve extra crispy skin, but watch carefully to avoid burning.
22. Remove the dish from the oven and allow it to rest for 5-10 minutes to let the juices redistribute.
23. Garnish the dish with freshly chopped parsley for color and added flavor.
24. Serve the chicken thighs with the creamy garlic Parmesan sauce spooned over the top.
25. Pair with sides like mashed potatoes, pasta, rice, or roasted vegetables for a complete meal.
Notes
1. Achieve perfectly crispy skin by thoroughly drying the chicken thighs and avoiding overcrowding in the pan.
2. Create a lusciously creamy garlic Parmesan sauce by whisking the ingredients thoroughly to avoid lumps and pouring it over the chicken during baking.
3. Add a personal touch with optional ingredients like sautéed mushrooms, spinach, or a pinch of red pepper flakes for extra flavor depth.
